日本では寿司や天ぷら、すき焼きなどと並ぶごちそうのひとつです。
ルーツはモンゴルの騎馬民族の羊肉料理ですが、日本のしゃぶしゃぶは1952年に大阪の肉料理店であるスエヒロが考案しました。
肉をだし汁に通す様子が、店員がたらいの中でおしぼりを洗う姿に似ていたことから「しゃぶしゃぶ」と名づけられたそうです。
使用される肉は基本的に牛肉ですが、1990年代に豚肉や鶏肉、魚など、国内各地の食材を使ったしゃぶしゃぶが登場しました。
特に鹿児島県の黒豚を使用した豚しゃぶは全国的に人気があります。©2017 KODANSHA
