Like udon, soba noodles, made from buckwheat flour, are the typical Japanese noodles. そば粉から作られるそばは、うどんと並ぶ日本の代表的な麺料理で、そばを食べる風習は15〜16世紀に始まったといわれます。
そばには、熱いつゆをかける「かけそば」と、冷たいつゆに浸す「もりそば」の２通りの食べ方があります。
作るのが簡単で、すぐ食べることができるそばは、忙しいサラリーマンの昼食として大人気。
そのため、日本には現在も立ち食いそば屋がたくさんあります。
さらに、日本では大晦日の夜に食べる「年越しそば」や、引っ越しをした時に近所に配る「引っ越しそば」などの風習もあります。
そばには健康に良いとされるルチンやビタミンBが豊富に含まれており、そばを茹でたあとの「そば湯」も、そばの栄養分がたっぷり入ったヘルシーなスープとして人気です。
