The fundamental components of Japanese meals are rice, soup, and side dishes, with the soup providing both water and salt. 和食は、ご飯、汁物、おかずの献立からなるのが基本で、このうち、水分や塩分を補給するのが汁物です。
汁物には大きく分けて、「すまし汁」と「濁り汁」の2種類があります。
すまし汁は透明で、代表的なものに吸い物があります。一方の濁り汁の代表が、味噌汁です。
主に酒の肴として提供される吸い物に対して、味噌汁はご飯とともに、日本人の食事には欠かせないものになっています。
さまざまな具を用いて作る味噌汁は栄養バランスに優れ、日本では、「おふくろの味」といえば多くの人が味噌汁をイメージします。
味噌汁の一種で、豚肉の入った豚汁、すまし汁の一種で、豆腐、大根やにんじんが入ったけんちん汁も有名です。
