このスタイルは神戸のステーキ専門店が始めたといわれ、「紅花」が1964年にニューヨークに出店して以来、外国人の注目を集めました。
この鉄板焼きスタイルは、そもそも＂鉄板＂と呼ばれる鉄の板の上で肉や野菜、魚介類などを焼いて食べる料理のこと。
お好み焼きなど、庶民的な鉄板焼きもありますが、高級なレストランではステーキを提供するのが一般的で、ブランド和牛や伊勢エビ、あわびなどの高級食材が使用されます。
