Allergies most often occur because some irritant enters the body, and is not completely digested once there. These allergens can get into the blood stream, and then cause any number of allergic reactions throughout the body. When protein is not completely digested, the amino acid "histidine" is decomposed by intestinal bacteria, and changed into the annoying "histamine".
